279g 00 Flour
8.33 Sea Salt
0.2g Yeast
174 g Water
Same Day Dough Balls at 62% hydration
1) Add Water (90 - 95 degrees) to container
2) Add Salt and Yeast, let sit for a minute then mix to blend
3) Add Flour, mix until a solid dough ball has formed (hand mixing or stand mixer both work)
4) Let sit for 20 minutes
5) Move dough to a flour surface and kneed for approximately 1 minute while shaping it into a big ball. Add a small amount of water to the container and return dough, cover tightly and let sit for 2 hours
6) If making multiple pizza doughs, measure out 460 - 465g chunks of dough. On a lightly flour surface work the dough into a tight dough ball and move to a floured proofing container. Let sit on the counter for 6 hours
